麻婆豆腐
主料:

牛肉末(或猪肉末)(65克)。

辅料:葱末(4克)、辣油(4克)、豆豉(10克)、花椒粉、大蒜末、酱油、嫩豆腐(200克)、辣椒粉、精盐、鸡汤(130克)、菱粉、黄酒。

制作:

1)先将嫩豆腐切成3分斜方块,用滚水煮二分钟,以去除石膏味,沥干水分;

2)另起旺猪油锅,将牛肉末和豆瓣酱一起炒;

3)再放辣椒粉、酱油、豆豉、辣油、黄酒、盐、蒜末,炒到入味;

4)再放豆腐和鸡汤100克,用小火焖成浓汁;
